Pies are pretty great, you know what sounds really good right now though, Doughnuts! We don't have any good doughnut places near me unfortunately.

Simplest doughnuts that I know of is to buy the biscuits and fry them up...

I'm well aware of sourdough and so on but it's something I've never bothered with to date because I always thought there was a need to keep the starter at a reasonable and stable warm(ish) temperature. Neither sensibly warm nor stable is ever going to happen in my place !!! I was about to give it a go mind you if I couldn't pick some generic yeast before I actually ran out. Guess I really need to do some reading up and then give it a proper go sometime if it actually is something I can achieve reliably :) The benefit of generic yeast is that it is pretty much a guaranteed result unless you do something really stupid.

What isn't mentioned in that video and probably should be because it's widely available is bread machine yeast. As far as I can tell it is exactly the same as instant yeast.

Yup, instant yeast is the only realistic option for bread machines so anything aimed at machines ought to be instant. TBH, I tend to use instant when doing things by hand anyway because it's a quick 'n' simple gauranteed result. No need to 'activate' or any other messing around, no possibility of a finding a dead pack and it's always consistent. Just bung a sensible amount of instant in the dry mix and get on with it.
