You can use it to save risk of damage to the 510 threads on your mod, or damage to the 510 connector from overtightening.

Or, if you've got a mod with bad 510 threading, you can sort of force it in to the damaged threads.

Sorry I'm also a little confused !

Can't the 510 to ego adapters not ALSO be used as 510 to 510 adapters ?

In which case I am not sure why one would buy these rather than the 510/ego.

Or am I misunderstanding something ?

yes, 510>ego adapters also do 510-510... Some people just don't want the exposed threads of an ego.
