What I have is Panasonic 3400mah 18650. Sometimes I charge while driving around in the car. I don't dare leave it charging alone, so I have been unplugging the charger and then when get back in I plug it back in and repeat until the charger says charged. I am not using the battery in-between.

Should not do that?
You'll get over it, or you'll die thinking about me. Either way I win!

Charging in steps the way you do it will not cause any problems.
If you don't leave your 3400mah battery on charger after it is full, there won't be any problem either.

The overcharge problems with this v7.1 are with all batteries with capacity of < ~1200mAh, and also if left on charger for too long after the battery is full.

Edit:
Note: I am talking about the real capacity of batteries, not what might be marked on the wraps.
